How do you use the whole chili; does one cut it up or just put it in the recipe as it is?

Usage of the whole chilis depend on the recipes. Some recipes call for cutting them up and some call for using them as is. If you want less heat in the chili, you can cut it open and remove the seeds. Some recipes call for soaking the chilis in water and then removing the stem and seeds before adding them into your dishes.
