Ingredients:
For Roll Up:
• 1 Egg, beaten
• 2/3 cup DDPK Buttermilk Pancake Mix
• 1 cup Milk
• 1 Tbsp Vegetable oil
For filling and topping:
• 2 banana, sliced
• 2 kiwi, sliced
• 1 peach, sliced
• 12 strawberry, sliced
• Whipping cream
Cooking Instructions:
Lightly beat the egg; gradually stir the egg into pancake mix, Add in vegetable oil and milk. Stir until smooth.
Heat a skillet to medium low heat and brush oil. Using a small ladle, cover the bottom of the pan with a thin film of batter by quickly tilting and rotation them.
When the bottoms of the pancake have a nice golden brown color, flip it over using a spatula and the fingers of one hand. The second side need cook for only a few seconds, until it is no longer sticky; overcooking the pancake will make them dry.
Slide the thin pancake out and fill with sliced banana, roll up the pancake and topped with kiwi, peach, strawberry and whipping cream.
